I’m a 95% vegetarian (a dietary change after learning I have CKD) and understand about the difficulties in dropping meat. My way of handling it is to have chicken or fish sometimes (about once a month or so) to settle that urge. I find I enjoy it so much more now, too. Tofu has been a good replacement in so many ways. Your meal looks delicious and similar to a stir fry I also make. Cheers.
Thanks Dan. It’s the first I time I have really cooked with it and it was surprisingly tasty. I’m trying to eat less meat after having watched “You are what you eat”. Not easy but it’s a start.

I used to love tofu. One of those foods that I stopped eating and have no idea why.

I think it was when I split with my wife. I couldn’t guarantee getting to the shops every week, so couldn’t guarantee fresh veggies.
